Fresh Tomato Sauce with Italian Salami

Heat oil in a skillet over medium heat and saute garlic until fragrant, 1-2 minutes. Add tomatoes and increase heat to medium-high. Cook about 10 minutes, stirring in salami after 8 minutes to heat through. Add oregano, pepperoncini, salt, pepper and sugar to taste.

2 Tbsp extra-virgin olive oil
2 medium garlic cloves, minced
3 lb ripe round tomatoes, cored, peeled, seeded, and cut into 1/2" pieces
4 oz salami , cubed
1 Tbsp fresh oregano leaves, chopped
1/3 cup pepperoncini, thinly sliced
1/4 teaspoon salt
1/8 teaspoon pepper, freshly ground, Granulated sugar
