Roasted Corn with Lime Cilantro Butter

Ingredients:

8 ears of corn, fresh or frozen
2 Tablespoons cilantro, finely chopped
2 Tablespoons fresh lime juice
2 Tablespoons butter, melted
1 teaspoon water

Directions

  1. Preheat oven to 450°F.
  2. Prepare 8 12" squares of foil.
  3. In small bowl, combine cilantro, juice, butter and water.
  4. Roll corn in mixture to coat.
  5. Place each ear on foil and wrap around corn.
  6. Place directly on oven rack and roast 35 minutes, turning occasionally until tender.
